Brown Eggs vs White Eggs.... Contrary to news reports, brown eggs are blessed with harder shells than their white counterparts (yes you CAN eat the shells), yolks of a carrot orange pigment and exceptional flavor. I can pet and hold all of mine, which is something to consider if you’re going for the "show" pedigree. Flavor being of paramount importance, the ones that I select are wonderfully jumpy, and with the exception of emergencies, I have learned to cold-shoulder the white variety (only one or two will let you hold them) that I may have on hand while egg-shopping.
