..Pacific Haute Cuisine (PHC) creates unique and fine dining experiences for people who truly enjoy good and unique food.The man behind all the food madness at PHC is Eric O’Connor, a Southern California-based chef and graduate of The Scottsdale Culinary Institute, a Le Cordon Bleu accredited school.Through PHC, O’Connor offers a rich, intimate learning experience for both savvy and not-so-savvy food lovers at home. “Nobody wants to cook a good, time-consuming meal at home,” he says. “I can provide food solutions and pairings. If the clients are willing to be patient I can even teach them how to cook at home.“For me, it’s wanting to educate people and make them aware of what types of food are out there,” O’Connor adds. “Most people don’t go home and think about cooking themselves a potato-wrapped halibut with corn truffle sauce, which is easy if you have the right resources and know where to look in your local supermarket.”O’Connor also believes in the power of pairing. Drinking the right wine with a certain food, he says, makes all the difference in the world. Americans, in general, he says, are catching on to the benefits of making better wine choices.“Instead of saying ‘I want red wine with meat and white wine with chicken,’ I’m stoked to hear people say, ‘I’ll get this pinot from the Carneros region in Napa Valley to go with my grilled salmon.”Bon Appetite!
