History :
Since 1802, with the creation of the Champagne house GONET, six generations of the family have made the firm grow and prosper. In 1973, Michel Gonet whose Champagnes bear his name today, modernized and increased the wine cellars with only one objective : to improve the quality of the wine making. Today, the Michel Gonet Champagnes, classified Grand Cru, cover 40 hectares of the best Champagne soil and are highly appreciated by both professionals and amateurs. Vineyard: The Champenois vineyard covers 40 hectares, near Avize (15 kms south of Epernay) in the Côte des Blancs were the great vintages are. This wine is composed of two types of vines which favour fineness and elegance:
- 10 % of Pinot noir.
The soil is the best one for the vine as it’s exclusively composed of chalk. The Côte des Blancs benefits from an exceptional climate: protected from the cold North winds by a providential hill, slopes exposed to the East and safe from the rainfalls in the valley. This perfect climate married to an exceptional soil help the Gonet vineyard to be recognised as a Grand Cru, the best regional distinction.
Le Château Lesparre
History
Relaunched in 1986 by the Gonet family, famous for its Champagnes Great Vintage, the Château Lesparre today covers a surface of 280 hectares under three guaranteed vintages : Bordeaux Supérieur, Graves de Vayres and Pessac Leognan. Vineyard The vineyard is divided into three great entities: 180 hectares around the château in the communes of Caillau and Vayres, 80 hectares (since 1999) on the Green Island in the estuary of the Gironde, opposite Margaux. This acquisition enables us to develop a new specific range of the Island wine (Château de l’Ile Verte , Château Belle Ile, Château La Terrasse, Château Valrose). Lastly, we also restored three properties under the appellation PESSAC-LEOGNAN (which represents a total surface of 30 hectares). One of these property, Château Haut Bacalan has just produced its first wine Today, our production amounts to 1 600 000 bottles of Bordeaux Supérieur, 450 000 Graves de Vayres red wine, and 80 000 Graves de Vayres white wine and 15000 bottles Pessac Leognan.

Château Haut Bacalan
History
This property where the philosopher Montesquieu lived, is located in the commune of Pessac, where there are only five châteaux, including Haut-Brion, the Haut-Brion mission and Pape Clement. Vineyard Entirely restored after having remained without production for over 70 years, it covers a surface of 6.5 hectares, including 2.5 hectares belonging to the city. We and the town hall of Pessac have a partnership agreement which makes our wine the official one of the town. The vineyard Graves sur Argiles is exclusively planted with merlot, which gives it an original aspect. The 20,000 bottles of our 2001 Graves red wine is our first production and will be available this year. This wine will be positioned at the top-of-therange: standard Grand Classified Vintage.

Châteaux d’Eck et Saint-Eugéne
13 km in the South Bordeaux, in the heart of Pessac – Leognan denomination, on very poor soil of graves (graves and pebbles) The Gonet family who settles in Champagne, became enthusiastic over the Eck soil. Wine producing was abandoned during a long time. The vineyard is also lined with an old castle dating back from the XI th century. Nice success since that first vintage. The 5 ha of vineyard produces exactly what they need to make a tasteful wine. The Château d’Eck is a medieval castle of 13 century located near Cadaujac. Château Saint-Eugène, is located in middle of Martillac vineyard. Vineyard These vineyards are recents, covering an area of 20 ha including 5 ha in Graves sableuses and also 14 ha in Graves sur Argiles. Red wine :

Château de l’île verte, et Château belle île
History:
Since 1999, the Gonet vineyard of Bordeaux has covered a surface of 300 hectares located on the most important island of the Gironde river : the Green Island. Produced with small yield merlot grapes, we take special care of the concentration of the juice and the quality of the fruit. This wine, which is of a strong constitution, is a product « PURE JUICE « (without any maturing in barrels) allowing us to keep the organic flavours of the wine as long as possible. This product fills a gap on the Bordeaux market: wines of great quality which have not been in barrels. Vineyard This strip of land, 12 kilometres long, shelters a vineyard of 100 hectares classified as Bordeaux Supérieur. It is important to stress that this island represents a remarkable viticultural site: located opposite to Margaux, the vineyard of the island also has two other major assets which are the climate, always moderated by the calorific mass of water of the Gironde, and the insular situation of the vines which protects the vineyard from any epidemic. These particular elements, which ensure both a healthy and ripe grape harvest, bring additional guarantees to the production of high quality wines. In addition, the exceptional sanitary conditions of the island, help us produce healthier vines with a a better respect for the environment.

Château la terrasse et Château Valrose
Built on the same concept as Château de l’Ile Verte, these wines take on the same characteristics of concentration and extraction. The contribution of a small quantity of “Verdots” adds a taste of originality, as well as a longer lasting flavour in the mouth. Lastly, we wished to refine these wines by a short stay in new barrels (French oak), respecting the fruit and balance of the wine. A powerful and racé wine results from it, without losing its elegance and velouté.

These particular elements, which ensure both a healthy and ripe grape harvest, bring additional guarantees to the production of high quality wines. In addition, the exceptional sanitary conditions of the island, help us produce healthier vines with a better respect for the environment. It is also interesting to note that we have, on the island, pre-phylloxerna vines that the INRA came to sample in order to supplement their ampelologic collection. My Interests

TECHNOLOGY
The grape harvest is hand picked, then vinified in thermoregulated stainless tanks respecting both modern techniques and traditions. The best wine (Graves de Vayres) is kept at least 3 years in oak barrels. The wine is then bottled and left to mature under the best conditions in our cellars to ensure the finest pleasure.
The MICRO-OXYGENATION
The Micro-oxygenation technique was developed in collaboration with a wine grower of the Madiran area, the Chamber of Agriculture of the Gironde and the INRA, and made its appearance five years ago in our wine cellars. Prohibited until 1998, it is thanks to an exemption of the official institutions that we could take advantage of this technology four years before the rest of the profession. This advance gives us the invaluable advantage of experience in the use of this technique.
The CONCEPT
It was born from an observation of the phenomena which leads to the improvement of wines raised in barrels. As you certainly know, two great exchanges occur inside a barrel. An aromatic exchange between the roasted oak of the barrel and the wine on the one hand, and a negligible exchange of oxygen entering the interior and the outside of the barrel on the other hand. What one calls: soft oxidation. It is this last phenomenon which interests us. We have tried to reproduce it in a tank of 560 hectolitres with wines which had never passed through a barrel (like our Bordeaux Supérieur) in order to benefit from the operation.
The TECHNIQUE
Firstly, we calculated the quantity of oxygen combined in a barrel in order to adapt it to the volume of a tank. The system used is the same as the one used for aeration of aquariums. Pure oxygen is released automatically at regular intervals (modified according to need) by the means of a microspore ceramic diffuse.
The FLASH-DÉTENTE
This technology is more recent. Developed since 1997 in collaboration with an engineering office, our Flash-relaxation system has been using the existing principle of a low concentration of pressure (usually found in the most prestigious Châteaux), married to the one of shock pressure. This system which required an investment of more than six thousands Euros (6 000) takes part in the increasing quality of our wines. The Flash-détente system helps us treat the vintage in order to improve the quality of wine making and its techniques as explained below: Once picked and sorted, the grapes are heated to a temperature ranging between 40 and 65° depending on the condition of the grapes and the result we want to obtain. These heated grapes then undergo a shock of pressure from the atmospheric one to a quasi vacuum. This operation bursts the cells of the film of the grape and extracts some inaccessible components that are not extracted by the traditional process. Finally the treated vintage is cooled at a temperature ranging between 20 and 30 ° and is processed by the traditional technique.
ADVANTAGES
This tool, the size of a semi-trailer, is adapted perfectly to the dimensions of our vineyard, which helps us obtain the following benefits: - better concentration of wine. -more important and complex aromatic extraction. - less risk of drift in the volatile acidity. - a cleaning of the damaged grape harvest by the elimination of laccase (rot enzyme). In conclusion, this technology brings us two considerable advances: the production of very high-class wines on the one hand, and the reduction of risks related to difficult years, on the other
