The Agave plant has been revered for ages as "sacred, mystic, and even divine".The Mexican government shows its great respect to the Agave plant and to tequila as it closely monitors the process of easing the plant into maturity and placing it in the hands of only those producers that will honor its heritage. With few sanctioned exceptions, no drink obtains the name tequila without coming from Jalisco, home to the town of Tequila and the city of Guadalajara.
