DINNER IS SERVED
VEGETARIAN FRIENDLY SALAD
Mexican Black Bean Salad
Combine black beans with fresh vegetables to make a fiber-rich vegetarian friendly salad.
INGREDIENTS
# 1 1/2 cups cooked black beans
# 3 scallions (green onions) sliced
# 2 ripe plum tomatoes, diced
# 1/3 cup corn, fresh, frozen or canned
# 2 tablespoons olive oil
# 1 tablespoon fresh lime juice
# 2 tablespoons freshly chopped cilantro
# salt and freshly ground black pepper to taste
# minced garlic and/or hot peppers may be added for an extra zesty flavor
DIRECTIONS1. Combine all ingredients in a medium size bowl and toss gently. Let the salad rest in the refrigerator until serving time.
2. Use this simple recipe as a starting point. Add green or red pepper, parsley, etc. to personalize this salad.
Makes 2 servings (approx 1 1/4 cups each.)

CRISPY SESAME SHRIMP
INGREDIENTS
3/4 cup herb-seasoned stuffing mix (such as Pepperidge Farm), crushed
1 teaspoon sesame seeds
1/4 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1 large egg white, lightly beaten
10 large shrimp, peeled and deveined (about 3/4 pound)
Cooking spray
DIRECTIONS
Preheat oven to 425°
Combine the first 6 ingredients in a small bowl. Place the egg white in a small shallow bowl. Dip shrimp in egg white, and dredge in stuffing mixture. Place the shrimp on a large baking sheet coated with cooking spray. Lightly coat shrimp with cooking spray. Bake at 425° for 15 minutes or until golden.
Yield: 2 servings (serving size: 5 shrimp)

APPLE CRISP
This apple crisp is sweet and simple to prepare, but uses very little added sugar.
INGREDIENTS:
3 medium baking apples, cored, sliced thin
1 tsp cinnamon
2 Tbsp sugar
2 Tbsp flour
TOPPING
1 cup quick oats
1 tsp vanilla
1/2 tsp cinnamon
1/4 cup brown sugar
2 Tbsp heart-healthy margarine
DIRECTIONS
Mix first four ingredients and place into 9-inch (square or round) baking dish.
In small bowl, mix Topping ingredients until crumbly
Spinkle topping over apple the apples.
Bake at 325 degrees F until apples are soft and topping is golden brown (about 30 minutes).
Number of Servings: 9
