Big Daddy
Big Daddy is a guy the men look up to,

Big Daddy’s food stories
I was a fan of the Oregon Trail game years back when computer games were in the new, and got pretty good at it, starting out with just a box of bullets, and hunting and trading game for needs, I would end with 40 oxen and a wagon with lots of extras :) Think about this ? When the Pioneers left St. Louis, Mo. on their trek west their rations were only so much, and more often than not, dishes were prepared make shift, that became menus of today in the west ! the mixed cultures would benefit each other and many common courses remain to day. The best story I heard was on the Immigrant trial, an English, Danish and Italian family were part of a wagon train, (NO DONNOR'S ON THIS PARTY), and along the way hunting was poor at first, and jerky wasn't used much yet except by the Indians, the English lady of the family on a Dutch oven made some English Muffins, enough to share with other families on the trip, The Danish family was knowledged in making cheese and butter, and offered up some cheese to add, when the Italian family man jumped up and said "it's a not a meal with out some good a meet" and pulled out some bologna salami to add, and thus the Bologna & Cheese sandwich was born ! and kids have been eating it in their lunches for generations :)
we'll call it 40 miles a day :) ...Along the southern wagon routes, a wagon train was low on rations, a little flour, and beans left, some salt, and very little drink, and no spices. when they stumbled upon a small settlement south of Taos, N.Mex.
The women of the wagon train and village share some recipe facts and they learned, about using leftover beans, refried, placed into a thin flat flour tortillia, and some hot pepper spicing, traded from the Apache Indians, made a great on the go meal. (A BURRITO), and some coffee beans traded from the south ground up and heated in water, made a great rationable recipe to make it across to the California Sierra's where hunting would be good again. NO NOT THE FIRST TACO BELL ! just another good story to chew on :)
a wagon train sets out for the west, and something not often portrayed in the movies is that behind these wagon trains were drovers, who herded along extra horses, cows, sheep, and pigs, sometimes goats, etc.
well on this one day while crossing the central plains, some Indians came along to trade with the pilgrims, and in the trade was presented some buffalo meet, very lean, and an offer was given to the natives to come back for supper that evening, and they accepted. The women of the train began to make a meal that included the buffalo meet. being so lean they found it difficult to hold together as the men had grounded it up for better distribution, so they added a little lamb meat and eggs to help hold it together, some dried bread and crackers to give it more body, and some pork to give it enough fat to cook, with out burning. it made a great meal and feed many. The next day as the wagon train continued on they got ahead of the drovers, and the Indians raided and stole their sheep and pork herds, finding themselves without their meet herds, lead them to find the Indians and get them back ! since they were on some friendly terms, the men tracked down the indian village, only to find them having a feast using the meet mixtures to hold their buffalo together. and to this day we do that with our beef :)
Now the moral of this story is : Don't make your meet loaf, (BEHIND THE WAGON TRAIN), or it will get eaten.LOL: although These stories may be believable, how true they are is not known, But it makes food fun, fulfilling, and gets kids to enjoy trying new things on the menu !Yours Truly,
