Huevos Rancheros is a tantalizing dish consisting of eggs over a tortilla covered with sauce and cheese. A little piece of heaven! Different regions cover their huevos with different sauces. In New Mexico the choice is always Red or Green Chili, which is delicious by the way! But if you are in other areas of the country, you can use what ever kind of sauce or salsa is popular or tasty.
