RECIPE FOR REFRIED BEANS FOR 500 PEOPLE25KG of black turtle beans(or pinto) Preferably organic 15KG of spanish onion 15Kg of nice feta or 'queso fresco' 500gr of cumin 3kg of fresh coriander 5 Kg of Masa Harina to make fresh tortillas 200gr of sea salt or to tasteFirst start by soaking the beans overnight in twice the liquid. First thing the next day cooking the beans in two XL pots on two big 'gas' or wood fires let them, pruttle away for a 3 to 4 hours at least making sure that someone is stirring them in time..also adding salt to taste. Get somebody to dice the 25 kg of onions and when the beans are cooked you start heating your biggest huge frying pans with a good lash of olive oil, adding the onion untill golden then add a big cup of cumin spice and let it simmer for 1 minute. Then add the beans with twice the liquid and fry away until the liquid is dissolved mashing it up constantly. once you get a firm paste their ready for serving. Serve with crumbled feta and some chopped coriander leaves + your Home-made tortillas(post recipe later). For those carnivores among you instead of olive oil you can use Lard!?
