bake the difference

“Bake the Difference” is a small company which is soon opening a bakery called “Narayana” in Rua de São José, in the centre of Lisbon. Why is this company different? Well… let me remind you that we are from Portugal (as you have probably noticed!), which means that those who are vegan, diabetic or lactose intolerant are headed for a hard time, mainly in which concerns to the fulfilment of a vital need: sweets! Apart from some extra dry and tasteless cakes, there are not many choices (not even a place to have a nice and warm “latte” (with vegetable milk) and some scones. We have then 3 choices: 1. To accept this miserable reality and be grateful for the little we have, despite the lack of taste, the dryness and the sad appearance (the choice of the laziest gourmands); 2. To be abstinent from all the sweet things (which seems absolutely cruel!); 3. To try to create lovely, yummy recipes which do not seem like “vegan” at all (over here, it is a politically correct way of saying it looks bland!) Due to these circumstances, the idea of opening a bakery fairly different from all the existent ones came as the best choice. Among all the 100% vegan cakes, cookies, loaves, muffins, … there will be sugar free, no gluten and natural/ bio choices. To sum up… we will try to provide an alternative to every customer; from the most traditional one, who is just looking for a nice home-made cake, to the most complex one, in terms of health or taste. In spite of the existence of a huge amount of books and internet sites with lots of vegan recipes, “Bake the Difference” creates its own recipes, based on good traditional ones (the knowledge from the “classical school” is quite useful!), trying to achieve the ideal… … consistence (we cannot put up with the “chewing-gum kind” cakes anymore!) … appearance (as people say: eyes also eat!) … and taste (here we all seem to have the same opinion: it is the essential point!) Although “Narayana” has not opened yet, “Bake the Difference” is already available for birthday parties, weddings or just to attend to the wish of those who are just in a mood for a nice cake (quite understandable, I think!)! As very proudly parents, we have posted some pictures of our “babies”, so, please, have a look! At least you will notice they do not certainly look like usual “veggie-healthy cakes” (why cannot healthy things be attractive?!?)! Do not hesitate to check out our list of cakes. But PLEASE: do not take it as a “Bible”!! These are just some examples which have already been tried (and approved!). It does not mean you should stick to it! Be creative and though it may seem quite a foolish idea, tell us about it! Perhaps it can work!
