About Me

Tony D here. Kicking my family bbq catering business up a notch. This site will soon have a detailed BBQ menu, catering rates and costs. It will have pics of recent catering events and competitions. I make everything from scratch (sauces, rubs, marinades, etc..). All our BBQ is "slow smoked" with either hickory or fruit woods depending on what we are cooking. All in my Lang 84.(www.pigroast.com) Best smoker grill on the planet!BBQ SAUCESBBQ Sauces are homemade and available in two sizes, pint and quart. Three flavors are available.Tony D's Sauce - basic bbq sauce with a smokey/zesty taste.Summer Sauce - fresh peach base for the sweetness, but not too sweet.Autumn sauce - fresh cranberry and apple base. Great with chicken and turkey.All Three sauces can be kicked up by adding our home grown Habanero peppers to what ever degree of hotness you desire. Great with the summer and autumn sauces. You first taste the sweet and then in a second or two the heat comes in.For all of our repeat customers we deduct $1.00 if you return the empty mason jar.RIBSRibs are trimmed and dry rubbed (spicy or mild) and slow smoked for approx. 6 hours. You may order your ribs dry or wet. All bbq sauces are grilled onto ribs til they are perfectly glazed.Also available in babyback and beef. Prices vary based on market price. Ask for details.PORKSouth Carolina Pulled Pork - Made from an entire pork shoulder. Slow smoked for over 15 hours then shredded. Pork is then basted with a vineger/tomato sauce. Great on Philly style italian steak or party rolls.Pork Tenderloin - marinaded the day before, then dry rubbed and slow smoked. The tenderloin can then be served dry or wet. If you choose wet, we grill the tenderloin with any one of our bbq sauces until perfectly glazed.Italian Sausage (hot or sweet) - homemade fresh italian sausage smoked and then finished on the grill. Add grilled Vidalia onions and fresh grilled red and green peppers.POULTRYChicken - marinated the day before, lightly dry rubbed, smoked, and then grilled until perfectly tender with a crispy skin. Served dry or wet. If you choose wet we grill the chicken for the last 15 minutes with any one of our bbq sauces.Turkey - Brined the day before, dry rubbed and slow smoked to perfection. Served whole or shredded. If you choose shredded we will mix with any one of our bbq sauces for a fantastic shredded bbq turkey. This one is great with the Autumn sauce (cranberry and apple).Deep Fried Turkey - Brined and injected with our special marinade. Then coated with our special bbq seasoned flour and deep fried.Italian Turkey Sausage (hot and sweet) - coming soon. We have to perfect the recipie first.BEEFShredded BBQ Beef - marinated, dry rubbed and slow smoked. Beef is then shredded and mixed with any of our bbq sauces.Texas BBQ Beef Brisket - coming soon! Whole beef brisket trimmed and dry rubbed. Then slow smoked for 15 hours and sliced thin.
