Mission of Civilization of Beer

The mission of Civilization of Beer is to promote, through education and appreciation, the responsible enjoyment of high quality, craft beer in the context of our rapidly changing culinary landscape.

Goals of Civilization of Beer

To close the gap between wine studies and beer studies in the professional culinary community and return beer to its proper place at the American table.
To provide educational and entertaining materials, beers, resources, and event services to the private and corporate sectors for a profit.
To operate for the public good, act philanthropically, and partner with those who promote socially responsible and environmentally sustainable practices.

Services of Civilization of Beer

The culinary professional division provides wholesale and brewery representatives, retail servers, and culinary students with a working knowledge of beer ingredients, styles, brewing processes, menu building, draught service diagnostics, and proven sales strategy. The underlying theme through these areas of study is the creation of an environment where high quality beer, when properly sold through education and appreciation, is profitable and valuable to the culinary professional.
The private and corporate events division provides services such as tutored tasting, beer pairing dinners, sampling events and parties, team building exercises, outings, and seminars. These situations are orchestrated in an entertaining way and teach guests about ingredients, styles, and food pairing while providing insight and perspective on the rich history and social significance of beer.
The restaurant and bar assessment division provides fully implemented beer programs including menu building, vertical pricing scenarios, incentive and accreditation programs, wholesaler relations, draught system install and diagnostics and all other aspects of beer sales and service.

My Interests



A Sign: It showed up on the bar of The Brooklyn Ale House in Williamsburg, Brooklyn after my last day working with the Brooklyn Brewery. The bar is owned by Sean Connelly, who trained me up as a young, eager beer guy on the upper west side of Manhattan in 1996. Sean is celebrating a decade of great beer and mindful business next year.

Good on you Sean and thanks. Put a Guinness for your dog Balto on my tab!


Philanthropy:
In the founding of Civilization of Beer and the undertaking of all of its philanthropic endeavors, I continue to believe wholeheartedly that a crucial part of being civilized is to posses a mindful understanding that we are not alone nor are we helpless. We all currently share the opportunity, as members of the global community, to help others in need and to act responsibly.

Therefore, one of the three main goals of Civilization of beer is to operate for the public good, and partner with those who promote socially responsible and environmentally sustainable practices.
Braking the Cycle
Aids Ride


For the past five years, Sam has been the co- captain of the Brooklyn Brewery’s cycling team. The team participates in, and the Brewery is a main sponsor of, Global Impact Tour’s Braking the Cycle Aids Ride, raising money for the AIDS services of the LGBT Center on West 13th Street in Manhattan. Last September, the 275 mile ride from Gettysburg (in the rain) to Manhattan, raised over $170,000 for the center. To learn more about the ride, contact www.brakingthecycle.org.
