Our gourmet food is prepared fresh daily from scratch with whole foods. We use certified organic ingredients. We are 100% vegetarian and vegan (we use no dairy or animal products of any kind). We use innovative no or low heat "cooking" techniques, to protect the vibrancy of the food while bringing out the unique and spectacular flavors.
Organic Garden alone has appeared on Channel 5's Chronicle, TV Diner, Channel 7 News, and Phantom Gourmet and has been mentioned in Time Magazine, Newsweek and Christian Science Monitor.
Our dishes display a new and exciting form of culinary art. Drawing from the styles of the West Coast, with a flair of Asian/Japanese presentation, our delicious, savory and somewhat exotic cuisine comes artistically arranged with colorful fruit and vegetable garnishments, crisp mixed greens and young sprouts and seeds that are bursting with life force, such as; sunflower, mung beansprouts, alfalfa, flax & lentil; wild rice, buckwheat & quinoa.
In the soaking and/or sprouting process, these seeds, nuts & grains become biologically active and the level of nutrients found in them increases dramatically. Enzyme-rich, many of these rate among the highest foods in protein (amino acids) and essential fatty acids. Mother's milk, a benchmark for nutritional needs for human development, contains only 1.5% to 4% protein (depending on who's book you read). Nearly every item on our menu contains a higher percentage of protein than that, pleasing both vegetarians and non-vegetarian. Protein-rich Almond or Cashew milk, is made fresh daily with soaked nuts, for smoothies, organic coffee and Chai tea.
Folks with food allergies and chemical sensitivities are ecstatic to find out about us since we use certified organic ingredients and no artificial anything. Most of our recipes do not contain any nuts but identify them in the menu when they do. Our pies typically do make use of our delicious Almond Date Crust. Since opening to the public we have never had a serious incident of reaction to any foods here by an individual with food allergies or chemical sensitivities.
PREPARING OUR UNIQUE RECIPESUsing high-powered blenders and food processors, delicious sauces, spreads, "cheese" and dressings are made with rich savory flavors, using superior organic olive oil, cider vinegar, fresh fruits, vegetables, greens, herbs and spices, including pure ocean harvested Sea Salt. For sweeteners, we use only figs, raisins, dates, apricots, mango or other fresh or dried fruits. With the exception of occasional Agave Nectar a pure raw syrup from the Agave Cactus, no concentrated or artificial sweeteners are ever used. We use the finest raw honey from a conscientious beekeeper only for tea or coffee on request but not in recipes. No heat processing could improve the taste of our fresh organic produce. The flavors and life force in the foods explode upon the palate.
Many of our recipes are uncooked in "state of the art" food dehydrators. Plump Sun Burgers, Falafel, Vegetarian "Meat Loaf" and Sun Crackers are "cooked" at temperatures between 95 to 110 degrees and served warm out of the unit. Fresh vegetables, greens, herbs & spices combine with seeds such sunflower & flax and sprouted chickpeas to produce amazing "cooked" flavors and textures. The taste is better than their conventional high heat cooked counterparts, while the enzyme activity and micronutrients are kept intact. While some of our soups are most flavorful served chilled, many, particularly in the winter months are served hot. Yet even many of our hot soups are keep in a raw concentrated pate-like form until just prior to serving. They are blended to order fresh in our Vita-mixers with hot water drawn from our hot tea dispenser.
Our desserts are truly spectacular. As mentioned, no sugar, concentrated or artificial sweeteners are ever used. Our pies are typically made with a crust of simply Pecan & Dates or Raisin. No wheat, other flour or dairy is ever used. The fresh fruit fillings are enhanced with perfect spices, like fresh cinnamon, cardamom, vanilla and ginger. We make creamy toppings by whipping cashew or almonds with vanilla, dates, figs, apricots or berries. Our favorite new topping is sweet young coconut water, coconut meat and dates blended creamy. Our cookies and brownies are made with rich home-made nut butters, fresh and dried fruits, spices and sometimes feature our raw carob powder. Dense in nutrients, these desserts are filling and not only guilt-free but nourishing for you. They are true "power bars", as they are typically rich in raw, utilizable protein and essential fatty-acids.
IN SEASON AND SATISFYINGMany of the dishes are served warm or contain spices appropriate for the season. In the winter, the ginger, garlic, spices and other elements in the recipes are indeed heating for the body. There is intense enjoyment as we consume the vibrant and beautifully presented dishes and take in the surroundings.

ENZYMESEnzymes are the catalyst and delivery system for the nutritional uptake of millions of nutrients discovered and as of yet undiscovered, which are found in whole foods. They create the action that allows living molecular plant structures to be best assimilated and utilized by the body. Science now knows that enzymes are destroyed at temperatures approaching 118 degrees. Conversely, many of these same elements in food are not only destroyed by high heat, but can become carcinogenic, as with cooked fats, which become trans fatty-acids and damage the structure of our cell walls.

VEGETARIANMany people find that transitioning to an "animal product free" diet becomes a natural process over several years and ultimately improves their vibrancy and spirit. Based on study of the digestive system, teeth and jaw, it appears we are designed to eat plant foods. Another good sign of this is that we cannot digest cholesterol, which is found only in animal products. In addition to the problematic cholesterol, an animal product based diet can be acidic, mucus forming and clogging to the digestive system, which many experts believe to be some of the underlying causes of disease.
It is interesting to note that primates such as the powerful gorilla, and our closest cousins, the orangutan & bonobo, are also vegetarians. Allowing time for "the process", natural food will help bring us to the vivacious state that our animal friends enjoy. In a clutter-free space we should also stretch, exercise, rest, laugh, love, and live.
ECO-CONSCIOUS
From the physical construction of our restaurant to the daily operations, we choose environmentally friendly products. We hope to become a model for a sustainable, eco-friendly restaurant of tomorrow. We try to recycle and send our organic food scraps to local farms for compost. For beverages, sprouting and produce washing, our water is purified to .5 microns,which is top of the line for filtration systems.
