Scrumptious Sunday Brunch
Salmon Eggs Benedict (Serves 4 persons)
Here's what you'll need:
• 1 pkg. Celebrity Salmon fillets or Wild Salmon Fillets (about 3/4 lb.) (Kitchen Hint: you may substitute Celebrity Smoked Salmon - but reduce salt in sauce on eggs)
• olive or vegetable oil
• 4 English muffins
• 8 eggs, poached
• salt and pepper
Prepare Hollandaise sauce in advance (see recipe below). Season frozen fillets with salt and pepper and place in lightly oiled baking pan. Broil about six inches from broiler for about 10 minutes until done. Separate muffins and toast them until lightly brown. Poach eggs in egg poacher to desired degree of doneness, usually about 4 minutes for soft-poached. (Kitchen Hint: If you don’t have an egg poacher, use a slotted spoon to drop individual eggs into gently boiling pan of water to which you’ve added a 1/2 teaspoon of vinegar. Hold egg in simmering water for about 2-3 minutes until done. Drain and keep warm until ready to use.) Arrange muffins on individual plate. Top with broiled salmon and poached eggs. Drizzle with warm Hollandaise sauce and serve.
Easy Blender Hollandaise Sauce (makes about 1 cup)
Here's what you'll need:
• 6 egg yolks
• 2 tablespoons lemon juice
• pinch of salt
• pinch of cayenne
• 5 tablespoons butter, melted and bubbling hot
In mini-processor or blender, combine egg yolks, lemon juice, salt and cayenne very briefly, about 2 seconds. Quickly pour in bubbling hot butter and continue to process until thick, about 4-5 seconds. Serve warm over Salmon Eggs Benedict.

Because it has been thought the best way to get the health benefits by eating it raw,the question has always been, how do you take advantage of the benefits without scaring everyone you know and love away?
well, good news for us foodies! Recent research has found that slightly crushed and lightly cooked garlic provides most of the same health benefits of the bulb in the raw. Microwaving is an absolute no no. Apparently, it strips away almost all of it's platelet busting ability.
Firmly believing that garlic is one of the most important food groups of gastronomic delight, this is great news!
