I work in an arthouse cinema and watch a lot of DVDs in my spare time so I see a fair amount of flicks.
Here are a few I highly recommend looking up:
'A Tale of Two Sisters' - very confusing but well worth watching even if you have to read all the forums on imdb.com to find out what the hell its all about!
'Wolf Creek' , 'Switchblade Romance' , and 'The Descent' - I know most people would already have heard of The Descent but it really is SO good that I couldn't not mention it! 'Switchblade' is an excellent french horror film - it all gets a bit strange, but the first half had my hair on end.

'The Eternal Sunshine of the Spotless Mind' & 'Adaptation'

All 6 volumes of Akira by Katsuhiro Otomo. It's easy to dismiss manga as kids' comic books but this really blew my mind. I can't recommend it to anyone enough if they've seen the film, read any other manga, or are open-minded about trying something different.
