About Me

Well right now I have a feral (feral = wild, unsocialized, scared of people) cat with 7 darling kittens, a feral pregnant cat and an 8 week old feral kitten. All of the kittens will be socialized and adopted out and the Feral cats will be spayed and released back to their colony on this nice ladies property. So my spare bedroom is filled with cages and cats. These cats had nowhere else to go so I took them. Other than that I am tending my garden and picking lots of yellow squash.

My Interests

Right now I am studying permaculture because I think it offers answers that we desperately need right now in our communities. It is a way of life that brings us back into our roles as participants in the earth's ecosystems and can help us all heal and move forward.

Messy Mikes – from Vegan Vittles by Joanne Stepaniak

1 Tbs. olive oil
1 medium onion, diced
1 8-ounce package tempeh, crumbled
2 Tbs. soy sauce
½ cup ketchup
1 tsp. prepared yellow mustard
1 tsp. apple cider vinegar
1 tsp. sweetener of your choice
4 whole grain burger buns, split

Place the oil in a 2-quart saucepan, and heat it over medium-high. When the oil is hot, add the onion, tempeh, and soy sauce, and sauté them until the onion is tender and lightly browned, about 10 minutes.

Add the remaining ingredients except the buns, and mix well. Reduce the heat to medium, and simmer the mixture, uncovered, for 10 minutes, stirring often. Divide the hot mixture equally among the buns, and serve at once.

Variation: If preferred, replace the tempeh with 1 cup textured vegetable protein that has been rehydrated in 7/8 cup boiling water. Let it rest for 5 minutes, then proceed with the recipe as directed.

(Note: You can also use the soy meat substitutes for this such as Boca or Lightlife brands, but tempeh is still my favorite.)

My new kitty
