Fresh Mozzarella-Tomato-Basil Salad• 1/2 pound fresh mozzarella cheese• 3 medium tomatoes, sliced• 1/2 teaspoon salt• 1/4 teaspoon pepper• 3 tablespoons olive oil• 1/2 cup chopped fresh basil leavesRemove cheese from brine, and cut into 16 thin slices; sprinkle tomato slices evenly with salt and pepper. Alternate tomato and cheese slices on a serving platter; drizzle with olive oil. Cover and chill 4 hours. Just before serving, sprinkle with chopped basil. Makes 8 servings.
