A graduate of the world-renowned Johnson & Wales University of Miami, Chef Cheo has integrated his Latin-Caribbean heritage with classical culinary training.Chef Cheo has been Executive Chef at some of the countries best restaurants, Personal Chef to top entertainers and athletes, and has showcased his talents at Top Sporting Events. He also taught aspiring chefs at Le Cordon Bleu Academy in Miami, FL.Chef Cheo gained his early training at some of Miami's trendiest restaurants, including The Mayfair House Hotel, St. Michel Hotel, and J. Alexander’s. The lively atmosphere of the Miami restaurants allowed Chef Cheo the opportunity to prepare meals for some of the country's most elite clientele.Taking his expertise beyond the restaurant, Chef Cheo has showcased his talents at several prestigious sporting events around the nation. Some of these events included the World Series, Kentucky Derby, Miami Grand Prix, and the Daytona 500. Chef Cheo's past clients include race car driver Mario Andretti and pit crew, actor Jason Priestly, pro-golfer Tiger Woods, tennis champion Pete Sampras, and Miami Heat player Alonzo Morning.In 2002, Chef Cheo returned to his hometown of Washington, D.C. where he worked at former BET owner Bob Johnson's restaurant, Ortanique in the heart of downtown Washington, serving the likes of Michael Jordan and other D.C. power brokers. He has been the Executive Chef for, not one, but two premier restaurants in the Nation's Capital. As the Executive Chef for Republic Gardens and Pearl restaurants, at 26 years old, he was one of the youngest chefs to hold this position on the East Coast. With flavorful menus as diverse as his culinary experience, Chef Cheo wowed diners with his Latin American and Asian inspired creations.In October 2003 Republic Gardens re-opened, one of Washington DC’s oldest and most established nightspots along the city's historic "U Street" corridor. Chef Cheo launched the newly designed restaurant as Executive Chef. The menu featured a lively and inventive menu with a distinguishing Latin-Asian twist. This streamlined and simplified eating experience was ideal for on-the-go clientele. Just one year later, in September 2004, Chef Cheo took his leadership and expertise back to downtown D.C. with the opening of Pearl Restaurant. The perfectly located, completely remodeled restaurant is just steps from the new Washington Convention Center, and short walking distance to the MCI Center and Chinatown. Serving an extensive lunch and dinner menu, this showcases Chef Cheo’s culinary diversity. Pearl diners are introduced to a new and sexy style that inspires an all-new trend in dining. His mixes of bold flavors, delicate textures, and generous portions have left a lasting mark on the city’s culinary scene.In 2005, Chef Cheo set his eyes on mastering his expertise as a Personal Chef and focuses on clientele with some of the most discerning taste. His inspired cuisine recently wowed NBA legend Patrick Ewing, Jeff McInnis of the New Jersey Nets and Caron Butler of the Washington Wizards who hired Cheo as their personal chef earlier this year, and Alfred Liggins, CEO of Radio One Broadcasting.
