About Me

Born on the 25th november 1985, ilManueldaVedanoalLambro a.k.a. Manuel Sioli from the small country of Vedano al Lambro (Milano) is an italian kitchen chef with experience in Milan, London, Norway, Bermuda and Switzerland. "Kitchen is my lab, food is my weapon, your satisfaction (and some €, of course;-))is my salary..." I was just 12 when i thought to which kind of school i will have made as high school..so bored for the very usual food of my mum (thank you mum!!), i've decided to dedicate my biz to the food's care and evolution. I have spent 5 nice years in the prestigious "vocational school for tourism and catering" inside the college "Ballerini", where i learn the most important basis of my work, about technic, style, and features of this job... and where i met my very friend and "Socio" (work-partner) Marco Xodo. After school i've begin to work in a small wine restaurant in Milan, "Dogana golosa", with the chef Luca Signorini, for 6 months. Then i've moved to the "Camp di cent pertigh" restaurant, in the land of Brianza for a short but important experience. After few time i've been called by Signorini, for come back to Milan, always in the same place but with a new management, the "Dogana del buongusto". I've got there, but just for 3 months, because i wanted to go abroad, for a seasonal experience...apparently there was nothing to do, but, thanks to my very friend Daniele Cerliani i've got the first big occasion of my life: London. I started alone, my destination was the Italian restaurant "Mosaico" in Mayfair, near the famous Piccadilly circus, directed by my "daddy chef" Matteo Mistrorigo. To begin i decided to stay there for 6 months, but after the summer i was exited by my job, i loved to work with a fantastic chef that every day has teach me a lot and gave me responsibility. I was so fuckin excited that i couldn't resist to stay ther for more time...i called my biz partner Marco "Marketto" Xodo for tell him to reach me in London: he jumped there and for the 4 next months we have work together in the pasta section of the restaurant...that was one of the best period of my career.. After X-mas 2006 i came back to Italy and looking for i job i went to the 5 lux starred hotel "Park Hyatt" of Milan. That was not a good time, because i didn't like this situation, that work-place, that chef, and even for many other facet of my life. I didn't feel good in health, my best grandfather Ambrogio (love u ) was leaving me for a cancer, and my love life wasn't good. Aniway i just want say a fuckin thanks even to the chef of this hotel Filipo Gozzoli for pulled me down every day. Sooner or later he will be helpful.. One day chef Mistrorigo called Marketto: there was an italian restaurant in Oslo looking for a chef and sous chef. Oslo was our new target. We have worked in the "Serpico" restaurant, in Frogner, near the seaport. That was the first occasion for us to manage a restaurant..we stay there for just 5 months..and don't ask me why!!! me too..i'm still lookin' for an answer. After my norwegian experience i spent a couple of months at "Grand Visconti Palace", 4 starred hotel in Milano, while i was deciding my next destination. The coice was between Montecarlo or Bermuda...and i opted for Bermuda , starting from the 31st july 2008, where me and Marketto spent six months at the "Splendido" restaurant & bar, inside the "Horizons&Cottages golf club". Back home for few weeks i was lookin' for a job quiet close to Italy, and i quickly restarted, this time alone..destination Switzerland! Finally i entered into a Michelin starred kitchen, at hotel "Alpenblick" in Wilderswil, under the training of Richard Stöckli.I love this biz, i'm in this biz, for my personal satisfaction (to begin), for my taste's satisfaction and for you as well...'cause businnes is businnes, but a satisfied and happy customer is something of unpayable...
