Buckshot's Stout Chili
NOTE: Some measurements are estimates, so you may need to adjust on the fly.

2 lbs of ground beef (any ground meat will do though)
2 tablespoons minced garlic
1 large onion, chopped
1 large green pepper, chopped
5 assorted hot peppers, minced fine (this depends on the amount of heat you want, you may not want to add any).
1 can dark red beans
1 can light red beans
1 can black beans (optional)
1 large can of tomato sauce
1/2 cup Franks Red Hot Sauce
1 small can chopped green chiles
1/2 cup light brown sugar
20 oz of Guiness Extra Stout Beer
1 tablespoon chipotle powder
1 tablespoon cayenne powder (red chili powder)
1 tablespoon mexican chili powder
1 tablespoon spicy mustard
1 tablespoon garlic powder
1 tablespoon cumin powder
1/2 tablespoon white pepper powder
1/2 tablespoon salt
1/2 tablespoon regular pepper
Brown meat in frying pan. Drain oil. Once brown, place meat in food processor and chop to fine. Place in crockpot or pot. Add oil or butter in pan, and cook garlic till brown, should be pretty quick, then add onions & green peppers. Cook till onions are golden and somewhat soft. Add veggies to meat. Add all remaining ingredients and stir. If using a crockpot, set on high and let cook for 3 hours or so. Keep lid off so water can be cooked off. Stir occassionally. If cooking in pot, cooking time is shorter, however make sure you watch and stir more frequently, as you do not want this to burn. It will be done when most of the water has cooked out.
I have cooked this chili for friends and myself. One of the only complaints I have heard is that it may be too hot, so you may want to deal with that. There is definitely a sweetness going with the heat though. Also, I think that you can taste the stout pretty nicely. Let me know what you think.
