Cream butter and sugar, add egg and then add the flour. Make into a stiff paste, roll out and cut into rounds. Place on grease proof paper on a baking tray. Cook in a moderate oven until slightly brown. When cold spread jam on one round and place another round on top. Ice the top of the sandwich and put a chocolate button on the middle of the icing. Et voila, lemon squeezy.
