I created Rhonda's Cooking, LLC, because in 2005, I learned that I had food intolerances and allergies to dairy, soy, eggs, almonds, blueberries, cane sugar, yeast, sesame seeds, amaranth, cod fish and my favorite, coffee! I was in total shock, these foods were all my favorites, especially coffee--afterall, I was a Starbuck's barista in 2004; I even had my own espresso machine so that I can make my cafe latte! As I sat down to think about the foods that I often cooked for years, I was in total disbelief of how many of them had ingredients that I was allergic to. I am a southern girl from Angie, Louisiana, who grew up eating things like Seafood Gumbo, fried catfish and hush puppies, smothered pork chops with rice and gravy, chicken and dumplings, greens and cornbread cooked with smoked ham hocks, pecan pie, Red Velvet cake, and the list goes on.
Instead of whining about the foods that I could no longer eat, I decided to merge my education in physics and engineering with my years of cooking experience. The more I researched and developed, the more I learned that I was not alone. There are millions of people in this country and across the world who experience the same or similar challenges as I do. As time progressed, my curiosity for living healthy grew so I enrolled in a home study program at the Cooper Institute in Dallas, Texas, where I received a certification in Providing Dietary Guidance.
Armed with information and cooking skills, I started experimenting in my lab, a.k.a. my kitchen, and recreating some of my favorite foods. I wanted to be able to accommodate my new way of eating and most importantly, I wanted to enjoy eating it! Being that I am from Louisiana, I needed to have food that was seasoned, sweet & spicy. After several months of trial and error, which many times resulted in throwing the food in the trash, I was able to compile several recipes that are healthy and flavorful, which can be found in the upcoming cookbook.
Rhonda's Cooking is a company that specializes in food lifestyle makeovers by helping clients improve their way of life with adding essential nutrients to their diets. Anyone who is challenged with food allergies, Celiac Disease, autoimmune diseases, high cholesterol, high blood pressure or simply just want to live a healthier lifestyle, then you are definitely in need of one our food lifestyle makeovers!
