The doors of the brewery opened in 1989 when John Jungers established the Adler Brau Brewery and Restaurant.Father and son partners Tom and Steve Lonsway took over the business in 2004 and welcome you to enjoy a novel experience in a historical place with a new name...Stone Cellar Brewpub and Restaurant.

Enhancing the destiny and tradition of offering Appleton and the Fox Cities the best hand-crafted FRESH AND NATURAL beer and tasty cuisine, we have brewpub fare with a flair!

When you stop and visit us, keep watch for Charlie, our resident ghost. Although Tom, Steve, and the other employees have yet to catch a glimpse of him, we hear him regularly and see the results of his pranks. Charlie has been up to some major pranks lately, we're thinking about holding a seance just to tell him to quit the shenannigans!BEER SCHOOL:Calling all Cellar Dwellers!! If you haven't tried it yet, sign up for Beer School! And if you've tried it before, you are probably already signed up for the next class: Belgian Ales. Beer School occurs the third Tuesday of every month. We start class at 7:00 pm and it usually lasts about 2 hours. The tuition for Beer School is $30.00 in advance or $35.00 at the door. Class includes a paired dinner, 9-10 samples of beers to match the topic, prizes, occasional guest speakers and fun. July's Beer School – Belgian Beers (add $5.00 to tuition cost) August East Coast Microbrews September – Stone Cellar Beers vs. the world’s October – Oktoberfest Biers November – Big Beers and Winter Warmers

Want to learn more about beer? Then sign up for our BEER SCHOOL. It is a fun and relaxing evening where we STUDY a different beer style or beer region every month. The CLASS lasts about 2 hours and we will sample 9 to 10 beers throughout the evening. Chef Brady always dazzles our STUDENTS with a wonderfully paired meal to accent the nuances of the beers STUDIED. No brewing knowledge is necessary, just a taste for good microbrews and imported beers. Tuition is $30.00 ($35.00 for Belgian Beers) per STUDENT and includes the beer samples, Dinner and several chances to win prizes, sign up via e-mail or call the restaurant at 731-3322.
