I remember my mother slicing open a beet. She cut it vertically, a cross-section that made it heart-shaped and exposed its ribbed structure: concentric stripes of orangey red with deeper purple. "Alex, come look," she would say. "Just look at how gorgeous this beet is." The greens lay next to it on the cutting board, chlorophyll still alive in them, branched red veins shining.
I still feel this way when I cut vegetables in cross-section, like some mystery of nature has been suddenly revealed here by my knife. Like everything I love, it makes me humble and proud at once.
