I am a solid food usually made from the milk of cows, goats, sheep, and other mammals.
I am made by curdling milk using a combination of rennet (or rennet substitutes) and acidification.
Bacteria then acidify the milk and play a role in defining the texture and flavor of me and most of my family. Some of my family also feature molds (they're stinky people), either on the outer rind or throughout (they really should shower sometimes).
