Haloumi; The Miracle Cheese

"I first discovered Haloumi when I was in my early twenties. I was trying to become a vegetarian but my feeble mind couldn't bear the idea of not eating bacon, and it couldn't seem to admit to a direct connection between bacon and the death of innocent pigs.
The Cypriot cheese made of cow, goat and sheeps milk closely resembles lard. Almost luminously white and tasting a bit like Feta that is not yet reached it's rancid peak, Haloumi does not truly come to life until you slice it and fry it... yes fry it. Imagine my surprise when the friend who recommended it to me spoke these words.
O how I scoffed, first in disbelief, and then the cheese itself in a mock saturday morning egg and bacon sandwich - served up with a generous portion of my own words."

Sounds Like: Chicken... or radishes bouncing off new latex onto a parquet floor... none of this laminate crap... or like the wind as it whstles through the doors of Wells cathedral and past the kitchen utensils shop just round the corner... or like a wheelybin one quater full of old cameras standing completly still... or like a midnight nose whistle... or maybe an excited dog's claws on lino as it rushes to greet a canvasing candidate... or like the tss tss tss of a cheap suited commuter... or the distant rumble of another 4X4... or the steady curl of a fresh green wave... or the silent butterfly of mary and joseph waiting to go on stage... or chicken...
